How To Make The Instant Pot Soup Recipes Potato and Leek Soup

Making the potato and leek soup recipe is relatively straightforward. You first will need to cut up the leeks into small pieces and rinse. Cut up the red potatoes into small bite-size pieces.

Turn on your Instant Pot on the saute setting and leave the top off. Add in your leeks and allow to cook. Stir occasionally. After a couple of minutes add in the red potatoes. Add in the salt, garlic powder, bay leaves, and other seasonings and stir. Add in your chicken or vegetable stock and stir.

Place the top onto the Instant Pot and set your machine to pressure cook for 5 to 10 minutes. Once the Instant Pot is done cooking, release the pressure and remove the top. Remove the whole bay leaves from the pot and blend the soup mix well with your immersion blender inside the Instant Pot.

Voila! Serve soup and garnish with diced parsley, bacon, or toppings of your choice, so yummy.

Ingredients Needed To Make Potato and Leek Soup

  • 6 medium-sized red potatoes
  • 3 leeks
  • 4 cups chicken stock or vegetable stock
  • 2 tablespoons butter
  • A tablespoon olive oil or avocado oil
  • One bay leaf
  • 1 tablespoon Italian seasoning
  • 1 tablespoon fresh thyme leaves
  • salt and pepper to taste
